Good question.  Though my impression is that the implementation language
for a research project is often selected by the graduate student(s),
rather than by the professor.  (Though it's also common for a professor
to advise the student to modify or build upon an existing hunk of
engineering/scientific code, which is usually written in Fortran or C.)
If a grad student were to choose Scheme for all-new code, that would
likely be due in part to him/her having received a thorough
indoctrination in Scheming Ways as an undergrad.
