[racket] How to take control of Scribble (or similar)

How do I go about taking control of styling of Scribble's PDF output to do
simple things like font selection and encourage TeX to place figures near
text?

It looks like the hooks are there in or around
scribble/latex-properties<http://docs.racket-lang.org/scribble/core.html?q=scribble#%28mod-path._scribble%2Flatex-properties%29>
but
it's been over 15 years since I've used TeX or LaTeX, so I'd appreciate an
example or two on where to start.  [This would also be good in the docs.]
